Where the Fire Never Dies
Hand-cut aged beef, live mesquite flames, and decades of ranching tradition — this is steakhouse dining the way it was always meant to be.

A Legacy Forged in Fire and Smoke
Guido Morales arrived in Amarillo in 1985 with little more than a cast-iron skillet, a family rub recipe, and an unshakeable belief that the best steak on earth deserved a stage worthy of its character.
Two years of curing wood, training fire, and sourcing only the finest local cattlemen later, Guido's Grill opened its doors. The line stretched around the block. It never really stopped.
A Place Worth Coming Back To
Words from the Ranch Community
"The Wrangler Ribeye hit different — I've eaten steak on three continents and nothing comes close to the char they put on that mesquite fire. You can taste decades of practice in every single bite. Guido's is a Texas institution."
"We booked the private dining room for our anniversary and the staff made it genuinely feel like the whole place was ours. The tomahawk tableside service is absolute theatre. We'll be back every year."
"I brought a table of chefs from a Michelin restaurant in Austin to Guido's, half-expecting to find fault. Instead we sat there in stunned silence. The short ribs — 14 hours of smoke — were the most technically impressive thing I ate all year."
